"TWICE BAKED POTATOES"


1/2 c. sour cream
1/4 c. Parmesan cheese
4 bacon strips, cooked
2 Tbsp. chopped onion
1 tsp. horseradish
salt and pepper to taste
1/2 c. sharp Cheddar cheese
2 large potatoes, cooked
4 tsp. butter

Slice potatoes in half. Scoop out insides. In large bowl, mix potato insides, sour cream, Parmesan cheese, bacon, horseradish, salt and pepper. Spoon into potato skins. Top each with 1 teaspoon butter. Divide sharp cheese and place on top of each potato. Bake at 350° for 20 minutes or until cheese is melted.
